Apple Buttermilk Pancakes


 
recipe ingredients:

260g self-raising Flour
.5 t Salt
110g Castor Sugar
180ml Buttermilk
1 Egg
170ml Apple Juice
50ml Milk
5ml Apple Syrup
.25 Apple, diced finely
recipe method:

Sieve the self-raising flour, salt and castor sugar

In a mixing bowl, add the buttermilk, egg, apple juice, milk and apple syrup

Stir this mixture into the flour mixture, and beat until smooth

Allow to rest for 45 minutes before using

Pour batter into greased rings on a solid top grill or flat-bottomed fry pan

Spoon some of the apple dice into the pancake, and cook until the surface near set then flip over to seal
 
NOTE:
Serve with thinly sliced mango, lime syrup and a drizzle of maple syrup in a stack
