recipe ingredients:

rockmelon (peeled,
deseeded & diced) |
| 80g |
honey |
| 5 |
mint
sprigs |
| 100g |
cucumber (peeled,
deseeded & diced) |
| 50g |
celery (peeled
& chopped) |
| 1t |
ginger (grated) |
| 1/2c |
olive
oil |
| 1T |
salt |

recipe method:
|
Cut one quarter of the melon into
very small dice. Place the remainder
into a saucepan with the honey,
bring to the boil and then remove
from the heat to cool down.
Add the mint and chill the mixture.
Once chilled blend with the cucumber,
celery, ginger and olive oil.
Pass through a fine sieve and
balance the taste with salt and
lemon juice.
Stir in the diced melon and serve
into frozen bowls or ice goblets.
An optional extra is to finish
with a drizzle of melon vodka
and mahoe greek yoghurt!
